Never made this in a crockpot, but it should work: 1 Small Onion - Diced finely 2 cans stewed tomatos (pureed) 1 TB Basil Pesto 1 tsp Lemon/Lime Juice Garlic, Black Pepper, Salt to Taste
Sautee the chopped/diced onion in light olive oil until they start to carmelize. Add tomato puree plus 1 can water, onions, pesto, and seasoning and cook on stovetop (or in crockpot). Just before serving, add 1/2 cup cream (while hot). Garnish with fresh basil or parsley and finely shredded Romano cheese
